KEFTEDES (MEATBALLS)
- 500 g minced beef
- 1 cup dried breadcrumbs
- ½ cup olive oil
- 2 medium onions
- 2 cloves garlic
- 2 eggs
- 1 tbsp dried thyme
- 2 tbsp dried oregano
- 4 tbsp finely chopped parsley
- salt, pepper
Chop the onions and garlic in a blender and then mix all the ingredients together in a bowl. Cover the bowl with clingfilm and leave for half an hour.
Shape the mixture into small meatballs. Pour the extra virgin olive oil into a deep frying pan to a depth of 2-3 centimetres and heat until the oil begins to ripple. Cook a layer of meatballs in the frying pan for 2-3 minutes then turn them over so they cook on the other side.
Serve with French fried potatoes.
