1 kg potatoes
½ - ¾ cup extra virgin olive oil
2-4 tbsp balsamic vinegar
¼ cup lemon juice
3 tbsp mustard
2 tbsp parsley, finely chopped
¼ cup spring onion, finely chopped
capers, salt, freshly ground pepper
Wash the potatoes well and boil them in their skins until soft but not falling apart.
Remove the skins and cut them into cubes.
Mix all the ingredients together.
Serve in a salad bowl.
